Replacing cereals with quinoa reduces blood glucose spikes after meals.
Eating quinoa regularly can help to prevent type 2 diabetes. This is the main conclusion of a study directed by Diana Daz Rizzolo, a researcher at the August Pi i Sunyer Biomedical Research Institute (IDIBAPS) and a member of the Faculty of Health Sciences at the Open University of Catalonia (UOC). The study’s findings were recently published in the journal Nutrients.
